The place that I buy the pre-cut from, sells it in 20 lb cases...mix that w/ about 3/4 gal of dressing and they say that it'll feed a 100 folks (as a side). It's worked out pretty good, for me, in the past, so go w/ 40 lbs of slaw, a gallon & a half or so of dressing and you should be all set.

I'd figure 25 lbs @ 2 oz/person. Be aware, that you will probably have too much, but cabbage is cheap. I throw alot away in the compost pile! Good luck. WM

Woody, I don't know about where you live but Zee, I'm suprised at you (what with being a citizen of the great state of Livingston and all) .
Around here, if I offered a 4 year old girl a 2 oz serving of anything she'd want to whip my butt  ...and probably would  .
Not trying to start anything but I've been looking at the various forums and/ or boards and noting serving sizes from the different regions, states, areas, etc. People around here take eating as a major source of enjoyment (guess that's why we're all so fat :D ) and what goes for a lot of areas, I just couldn't get away with down here...not really talking about BBQ because I've got no real history of catering it to a crowd but with other things I do. A 2 oz serving of slaw from Chick-fil-A might fly, because that's all that you expect, but most folks (at least around here) expect more from a catered affair. I can't see where I could get away with offering any side @ a 2 oz serving size (except if you're using the slaw as a sandwich topper).
Now with all that being said, if the norm for your area supports a certain sized serving then I certainly wouldn't vary...just saying to give them what they want and expect.
nvr2old...base your individual serving size on what's expected in your area and then it's pretty easy to calculate by weight.

How many ounce's in a ice cream scoop? How many ice cream scoops per pound? What ever it is sounds about right to me.

I get you, Woodman...just trying to point out that the answer is gonna be affected by various factors w/ one of the biggest being the region that you're located in.
Fortunately, around here, the only problem with having any left would be the fights that break out, among the guests, as to who's getting what  .

If you kin find T. Marzetti's Slaw Dressing in yer stores, that's a purdy good "creemy" dressin'. Saves a lotta prep time. Just add to yer bags of slaw, dump tha dressin', mix to yer like'n. Takes bout a minute or less ta make a full size alum. pan. When cookin' for large crowds, tha last thing ya need iz ta have ta "make" or prep sumthin'...... cuz time gits tite sumtimes...so like they say..."cook smarter".
Az for yer rekwest for a slaw recipe:idea: ........I don't have one.

Here's the link to the KFC slaw recipe. I substitue Miracle Whip for the mayo, double the the amount of veggies to dressing, and I don't mince the veggies either.

I guess that might be a Texas thing, DB. I can't even get my dogs to eat mayo.

Thinking about cole slaw..there's only one that I like. That is either made or bought by a small deli in a little village downstate from me. I don't know the ins-and-outs, but the slaw is stringy and tastes kinda like it has Tahini or something in it. I never did ask...but I guess i should.

Well, as I said, I ain't that pcky about Mayo or Miracle Whip. But I have a similar hang-up about Kool Whip...I think the stuff tastes like medicine.

Not to hijack this, but, what are the preferences here? Creamy dressing or vinegar dressing?

Creamy...I always associate the vinegar dressings for the yuppie crowd.

Vinegar dressings for me. I grew up with the salted and drained slaw with vinegar and sugar dressings, and I still prefer them. I also am not much of a mayo fan.
Creamy dressings can be okay, just so long as there is not too much. Too many of the creamy dressing slaws I see are more like dip than slaw!

Don't get me wrong. I just ASSOCIATE the vinegar sauces with the Yups, and that's probably because I saw it at a party or a TV show or something that gave me the IMPRESSION that it was their own 'unique' contribution to the world.

We went to the sight recommended be EZGOIN and slightly modified the the KFC recipe. We subbed one cup of ranch dressing for the buttermilk, milk, and mayo, everything else remained the same. The recipe was very good. Quite a few compliments. 2-3 ozs. per person was more than enough. I somehow neglected to do the math and bought 12-48oz. bags of slaw mix and 3 gallons of ranch dressing. We threw away a large tin of mixed slaw and still trying to give away the 7 or 8 unopened bags of slaw mix. I have enough ranch dressing to last a year. Thanks for your help.

Put some of that Ranch dressing on your next baked tater instead of sour cream, you will love it.

That was one secret I wasn't giving away. Ranch beats the hell out of sour cream on baked potatos, just like real butter beats margarine.
