I am going to cut out the back bone of some chickens and lay them flat on my pit tomorrow, I have never done them that way. What would be the cook time on some 4 lb chickens split flat on a smoker @ 230-250 degrees?

About three to three and a half hours or more importantly, once the internal temp reaches 165. A simple $5.00 food thermometer will do the trick and keep everyone feelin' fine.

Thanks, I'll put them on a little after 8 am. Just trying to figure out what time to start them so they will be ready just before noon.

There is really no need to do chickens at that low of a temp.
I usually do them at around 275. I start them skin up and swith to skin down about 1/2 way thru the cook. All the juices that form just sit on the meat keeping it nice and moist.

I ran them at 240 for several hours and then had to bump them up to 320 to get the darn things done and it still took 5 hours. I have not found a way to cook chicken in my smoker that I am pleased with, I mean the meat to me when smoked is better in a chicken salad or something. It's hard to beat chicken grill on an open pit mopped with a salt and vinegar sauce.

I do em on my WSMs at 325* to 355* lid temp and get awesome chicken!
