do you 'only' use water in your drip pan or would you suggest
another liquid, such as an inexpensive beer? or? i'm making
spareribs this weekend, low-n-slow, no foil. thanks!

Apple juice, or cola works great.

Wine!

I have also used plain water and cut fruit.

Wine would work too, but I would use Boone's Farm Apple Wine. :)

Hey, save that cheap beer for me...:D

I have seen folks adding sliced onions to their drip pan...

heck, at one time when I first started out cooking..I used to cut onions in half and throw them in the firebox...If any of this helps... I don't know, but it don't hurt trying different things..may hit on something that works well for you...good luck

Water with onion and garlic sure smells nice. Like Gordo said, don't know if it helps, but I still do it.
