Fighting with photobucket and our desktop comp. Here is the link to the pics I took, getting the ribs ready, and starting of the cook. When I get the ssues fixed, I'll post the pics during cook, and the one slab I remembered to take a pic of....was hungry by that point.

I made my rub, slather and mop. Got the pit warmed up to 270ish, which was dropped down to 225ish once the charcoal got going and the ribs put into the pit. I used 3-2-1 with 2 mops before foil and one after. With a little pulling, the bones came clean from the meat, but not too easily.

Oh yea, I got it that time. Them bones look beautiful, and they are nice and straight. Thanks for the pics.

What temp. difference do you see between what is showing on the gauge and the grill surface?

If ya mean the one in the pic, That is the temp at the food grates. That was the temp when the pit was pre heated. I get it real hot in the fire box, so when I add my charcoal basket, with a a chimney of coals in the top corner, starting my minion method, and load in the meat, the steel is a little warmer for a quicker temp loss recovery. Once the food was in and everything closed up, it took about 5 minutes for her to crank steady. Temp stayed at 235-240 through this cook. It was about 55-60 outside with 15 mph winds.

If asking about the difference between the digital probe and the them on the door, i get about a 50* on the horizontal, closer to 75* from the bottom tray in the upright to the therm.
