View Full Version : Buffalo Burgers?
Well I thought I might try this tomarrow, never cooked them before so its Im kind winging it. Anybody got any experience cooking with buffalo meat? I was thinking a little TXBBQRUB (original) and worcestershire, didnt think I could go wrong. But Ill take any ideas.

My experience w/Buffalo burgers has been to treat them just like hamburgers except for the cook time. Since Buffalo is so lean you can overcook/dry them out in a heart beat. I like to add onion in the meat to help keep it moist. Spice it however you like, TXBBQ Rub will make anything taste better, Wooster won't hurt it either.

Go to search and type in "Buffalo Burgers" and you will several threads that may help. They all seem to agree with Hockey Dad in that they are very lean and can dry out real quick. Good luck.
Thanks Im gonna try that tonight see how it goes. I usually do and did use the search function, but didnt get a clear answer to what I was looking for, but HockeyDad made a good point, Im worried about overcooking them so Im gonna add some onions to the mix and see how it turns out.

Well the burgers turned out excellent, adding the onion really made a difference I think, they were juicy and tasty. I added cheese, lettuce tomato to mine. My wife got a little creative and turned hers into a mexican buffalo burger?? she added cheese, refried beans and salsa to hers and claims it was one of the best burgers Ive ever cooked?? Id have to agree... another positive result from TXBBQRUB!!

buffalo burgers are great, but i highly recommend kobe beef as well....THAT was the best burger i've ever had

Did you grill them or smoke them? I have been smoking turkey burgers and they turn out great! Along with the onion, I add egg white and Wheat ritz crackers (crushed). Coat with TBBQ rub Smoke a portabella mushroom at the same time. When the burgers about done slice the mushroom and put a strip on each pattie and top with pepper jack cheese. Pretty good. But I will be trying the buffalo burger!

I love buffalo burgers, but they have around half the fat of your normal 80/20 ground beef. In other words, treat them something like 90/10 ground beef, and you should be in good shape.
I'm also thinking about the refried beans on the burger. You don't have to wrap beef in a tortilla to add those beans to it.
Damn, when's lunch?
