View Full Version : Did some wings last night

I was up visiting my dad in the U.P. of Michigan, and we played around with his WSM. I now have one too, so I was able to practice on his a little. We did a pound of bacon first, to get some seasoning in the cooker and a little grease on the racks. Then, we did some chicken wings. I did them similar to how Don Marco did his about 3 months ago. The marinated in crushed pineapple, chipotles and adobo, a little dash of Southern Comfort and some salt and pepper. They smoked for 2 1/2 hours on the WSM, then went on the Weber kettle for about 30 minutes to get nice and crispy. Came out really nice. Used Royal Oak lump in the smoker and grill, very good charcoal I think. Here's a pic of the final product...hopefully it shows up!
