I did my annual BBQ by tha Pool Party for 2 of tha atty's this past weekend.
Heers tha deel.....I coodn't find a brisket in any Sam's, Wally Werld, or Kroger within a 40 mile radius!:shock:( I wuz even lookin for brisket at 2:30 in tha mornin!) I wunted ta put my shoulders and briskets on around 4 or 5 am. Since I coodn't find any brisket I figgerd tha fella wood understand...besides....he wuz alreddy get'n a big price break for havin' 4 meats.....$11 pp insted of tha usual $17pp. He sed sit tite an he wood see whut he cood find.......this iz at 9 am. (they eat at 7:30 pm) He axed me how many I needed an I tole him 3 10 #ers. Long story shortened.....he comes back with 3 briskets from some hoity toity food market that caters to tha "well-to-do". I figger since he bought tha meat I'd have ta deduct sum of that amount from tha total bill. I axed how much they were, an he sed $120!!!:shock: :shock: My wife iz madder'n hell at me when she duz tha laundry cuz I'm still *****'n in my drawers! I'm used ta payin Wally Werld prices at $1.67 per #......$20 tops for a brisket. When I saw theese $40 briskets they looked liked flats....tha point wuz almost az narrow az tha flat in thickness (they were bout 18" long an 12" wide). That butcher trimmed tha hell outa thoze briskets ta where there wuz only bout 1/8" of a fat cap in places. But I must say, they were tha purdyest briskets I ever seen. Deep red in color an az flexible az a sheet of paper. Wish I had thaut ta take a pix of 'em.....but guess I wuz in shock mode for tha rest of tha day an nite. They didn't git on tha pit til 11:30am...(remember eat time iz 7:30) so needless ta say I had ta cook hot. That fact tha they didn't have much fat on 'em an havin' ta cook 'em at a higher temp left me feelin vulnerable to puttin' out sum dry briskets.
They came out ok....a tad dry for me. Texture wuz good. Taste wuz eggcellent cuz I used TecksusBBQRub :wink: (brisket blend). Tha guests an tha hosts raved over all tha Q az they alwaze do, but tha brisket stole tha show. Go figger.

Now heers my dee-lema.....Tha fella paid for tha briskets out of hiz pocket.....but he also paid for brisket which wuz included in our price agreement. He paid a 50% deposit and owes me tha other 50%......when he comes back in town. Kwestyun.......Am I to deduct tha entire $120 from tha remaining balance due, or am I entitled to not pay all of that becuz of tha amount of gas I used (bout $30) travelin' round town lookin, plus that fact that I still had ta cook tha meat? A kwick reply wood be preceated, cuz he's in tha office today an subject ta call me in ta square up tha money. Thanx!

Well here is my suggestion ...

Tell him thanks for the high dollar brisket ... that was generous of him.

No refund ... tell him you had to cook them high dollar things and that how it is ... if he has something negative to say tell him to get over it ... and while your at it tell him next time the price is double for all the problems he caused ... including the trauma of having to cook that high dollar stuff ... and if he dont like it ... well go hump himself ... matter of fact tell him you raised this price this time and he owes you another $200 for your headache and excessive gasoline you used for his sorry *** ...

You might also want to ask him to represent you at your trial for wrongful termination when he kicks your *** out of the office ... and by the way tell him it's gonna be pro bono !!

I guess I'm in the minority here. Since he bought the brisket already for $120, I would cut the brisket cost out of the total price, but just the overall meat cost, still collecting for cooking the briskets though. Doesnt' even have to be like you're giving him a deal, just a simple business matter. Personally, if the briskets were $120...I would have gone without!

Buckeye! Welcome to The North! I paid $105 for 30 lbs of flats last week. Course they was "prime", but nontheless! Back out the entire cost of the briskets. It was your fault you did not have the meat you "wanted" to prepare. He did you a favor by going and getting them. Take the "high road" and don't listen to that scoundrel Texana!!!:twisted:

Split the difference with him in the cost of the brisket. Deduct $60.00 bucks from the total you would have charged, and just chalk it up to a lesson learned. By the way, Wally World had laundry detergent on sale this week. :lol: :lol:

Always have to allow for the "Q" factor Buckeye, you started losing money on this deal the minute you gave him a break on the usual pricing.
Could have stated some kind of limits on price, size etc. of briskets when he told you to "sit tight and he'd take care of getting one". You had know idea what he was gonna come back with.... Split the diff.... allow a $60 deduct.


Those heavily skid marked drawers gonna cost ya extry as far as points go with the lil lady to get your Q Festivus permishun....:rolleyes:

Be up-front. Discuss it with him when you get to finalizing the bill. As you mention all the good food and stuff that he got from your labors and experience (by just signing a check), you could then mention, "Oh, yeah, and then there's the little difference in price for the brisket that you bought..."

My 2 cents is that he'll say, "Oh, that...forget about it."

Remember I tolla-you so.

Santa.....Homeboy wuz git'n that price a few yeers before I set my prices for my catering. Main reason I haven't gone up on him iz cuz he's been my best customer for 5 yeers. Everybody else pays full price.:twisted:

Fellas, I understand bout me "not" bein able ta find brisket and that he "did" find sum. But kwite franklee I don't think 1/2 a day tha day before a party iz enuff time ta find everything you need, nor do I feel responsible for not bein' able to provide them damn briskets! I ushualee have at leest a weeks notice and money in hand. Altho this party had been planned 3 months ago......he never finalized a # of guests til tha day before......even tho we talked about it a few times durin' tha beginnin of tha week. He kept tellin me he wuz still get'n RSVP's.

This fella ain't blink'n at comin' off that $120 or split'n it.....he negotiates an settles cases werth millions of $$$$, so like yall sed.......I'm chalk'n this one up az a loss. I made $430 which ain't bad.....but $550 looked a hole lot mo better.

This episode haz opened my eyes. From now on, things/services will be in ink. An no more Mr. Nice Dude!:!: :!: :evil:

PS.....for tha record.....if my brisket weren't so damn good he woodn't be so adamant bout havin' it.......we'd go back ta jus ribs, pulled pork an chicken. But he got a taste of that brisket an he ain't been rite since.

I would blame you because of your background, but I am assuming that it is the same as the lawyer so technically, you are both at fault........unless I am wrong and he is white...........then it is totally your fault !!!!!:twisted:

And if he follows "all" of the advise I gave him .. then it's a deal ... but to my knowledge he has not told the lawyer to shove it nor has he been terminated ... so until then .... tough luck ....

oh wait ... isnt that what the lawyer really said ... to bad to sad, but it's buckeye's loss ....

And thanks for offering free stuff ... it's nice to know I got you to help me .... wait till this weekend .... sounds like we need a beer or three .... and dont forget the wife :)

Is that "profit"? If so, you did OK. If that is the gross sale, then I think you are undervaluing your services. Four meats for $ 6-7 per person????? For me, two meats, two sides, plates, napkins, buns, sauce, and plastic tableware is $1600 for 100 persons. Could be the difference in the markets but $6-7 /person seems low, even for Georgia! Was it "confederate" money?????

$600 wuz my profit. Like I sed before, my catering prices for 4 meats 3 sides plateware etc. iz $17 pp. , so if that had been anybodee else I'da charged 'em $1700. Good point Woody......I wuz paid with confed $$$$....if I wuz paid with yankee $$$$ it wooda been worth twice az much.:sarcastic:
