View Full Version : Bride-to-be wants ribs!

I'll be cooking for a wedding reception Oct. 20, 2008. My good friend's daughter wants some of my ribs! 8) Gotta love this gal! She's as redneck as the day is long! So I'm gonna oblige her request and give her and hubby the best I can!

I have cooked for my family reunion for the past 4 years with 35-45 in attendence with no worries but the head count for this wedding now stands at 76! :o Adults only split evenly between men and women. How many slabs (trimmed) would you recommend I cook? I am limited to cook space wid my Stumps but can do 15 trimmed slabs at a time. Y'all think that will be enough? I will also be cooking 3-4 butts for some pulled pork as well but plan to pre-cook them and cook the ribs on site in Jacksonville, FL. There will also be sides including a huge pot of Brunswick stew, beans, slaw and some good ole Aunt Lora's mac & cheese! This menu I will do. Some others will be bringing various dishes like boiled shrimp, fruit, dips, etc. Ya think with the ribs and trimmins 15 will do? This is a payin gig too, btw! 8)

Y'alls expertice and advise is mucho appreciated! :D

Double what you cooked at family reuion. Sounds like a good time and I'm sure you can handle it. Be sure to give da bride a bone or two.

15 spares everyone should get a few ribs and 4 butts should make at least 60-70 good size sammies. Get TB to help on the Brunswick stew, he can do a good one ya know.
Move the party over this way about 200 miles and I'll pull the ZZ-Swamp Gator over to help out. Bones & Butts, don't get much better :D

Thanks again, Zee! I appreciate the offer of help wid da ZZ-Swamp Gator. I wish I could do that but alas da bride has other plans! :wink: I'm gonna take my cuz wid me for an extra pair of hands and he actually makes a pretty durn good Brunswick stew himself. All da ribs will be prepped before hand so all I'll have to do Sat. morning is put them on the cooker that will be fired up Fri pm. All the other dishes will only need warming up.

Thom, she is a sport for sure! Didn't want "no stinkin sit-down formal dinner" for her wedding! :lol: A party around the pool, loud music, adult beverages, and my finger-lickin good ribs is more her style! Gotta love it! :wink:
