Ok, here's the deal. This weekend I did a small brisket with the rub I purchased from texasbbq. Invited a few friends and their respective others and had a few beers and some good bbq. (sorry db..no pics). My problem now is a wedding is taking place in a couple months and they would like me to do the bbq an the fixins. Here's where I need the help. I don't know how much to charge per plate, What to follow up with as far as a side dish...beans, cornbread, or any idea that be a good compliment to this event.:? I know alot of You guy's cater events and are geared up for big feeds...I heard 250 or more. Just looking for some ideas (and maybe a bigger smoker:twisted: ). I'll be watchin.

:shock: Might be just me, but 250 for the first time? :shock: Holy crap! :D That will be a handful, brutha! Think I would consider sumptin a tad lighter first time out da chute! There's a ton of work involved for even a small group. Best of luck to ya , though! :wink:

Cook and pull 15 butts and warm up 16 gallon cans of baked beans in your crawfish pot. Get enough buns and thin out a gallon of your favorite sauce and you'll be a star.
That's how I'd have to feed that many. Pit ain't that big ya know.

You will want to do appx 90 lbs of butts and 90 lbs of briskets. This should yield you appx .375 lbs of meat per person. I would serve some "ranch" or, "cowboy" style beans with cole slaw and bread. Bigger cooker? I'd say you need a pretty good size one to do this. You can buy the bread , slaw, and dressing at Sam's, Costco, GFS. I would not attempt this as my first big cook. I would want to "ramp-up." A screwed up wedding is ugly!!!! WM

No , .375 TOTAL. Some will eat both. Some will eat one or the other. Some will eat none. There is no real way to get it just right. Better to have too much though.

Huh, down here .431 falls off da plate on da way to da table ya know. :D Heck, if'n ya gonna waste dat firewood mite as well cook enough for da next day too :lol:

Weddings are a mess, especially for your first cater unless it is in your backyard and you only have a few friends over. Practice on someone besides a bride. A small brisket for friends is way different than a wedding. Can you imagine what would happen if the food wasn't done in time, can you see the bride crying!! OMG, stay away from brides until you have a lot of experience catering.

You're gonna need help for sure. Too bad it's so dang far I wouldn't mind spending some time in good ol' Huskerland and helping. I haven't been back up there in a couple years.
