So I'm wondering: What's the longest time you have smoked ribs? I'm talking about the big racks with brisket meat left on them.
I was thinking of smoking 3 or 4 racks this Saturday at 225 for around 7.5 hours. 3.5 hours naked / 2 hours foiled / 2 hours to finish
The last time I smoked full racks using the 3-2-1, the brisket end came out too tough i think. But they were still pretty moist which tells me 6 hours maybe wasn't long enough for as big as they were. And I thought if I keep the heat around 225 I could take them a bit longer...
Your thoughts?

Zeeman...as I mentioned, I tried this last time and although moist with a good crust, I found the brisket area to be too tough. Actually the ribs themselves could have been just a bit more tender. I mean everybody liked them...it was just my opinion.

Are you wrappin in da "2.5-.50" mode? :? I tell ya...I gets more kudos on my ribs than anything I cook usin dis method. I have, though, on occasion, cut it back to 3-1-1 just cause some have said dey likes ta bite em off da bone as apposed ta pullin da bone out clean! Don't matter none what size da slab be neither! :wink: Pit temp at 225* and dey be candy ta whoever naws on 'em!

A person cannot cook bbq by time..though know I some who try. Cook em meat side down till you can tear between a middle bone real easy..then wrap em in foil and stick em in the hotbox for at least an hour..two or three is mo betta. Cool them down slowly and if you want to glaze..put em back on the fire and do it "once" on each side..letting it burn in slightly. So you got one flip coming at that point. Cut em up..rub em again on all sides with whutever you rubbed em with at the start line. Turn em in and get ready to collect your money or get hugs from the eaters etc. If you a temp gauge type guy conentrate on 260. Slow cooked ribs always come out dry..with most pits and most circumstances. Course I could give you some exceptions but I cant spend all night on this project. I got rats to kiill ya know?

I find that they always take longer than 3-2-1 . It is merely a starting place!

I put them on and take them off when they are ready. I cook low and slow and they are dripping with juice that I have to use a napkin to clean up the juice in the turn-in tray before turning them. Don't want to be disqualified for saucing in the box. :D

I have been putting my ribs on bone side down. What's the reasoning behind putting them meat side down? Won't that dry em' out faster?

Some will tell ya that bone side up helps to trap some of the juices in the concave portion of the bones etc... I cook mine bone side down they turn out great! Oh yeah, I cook trimmed spares. +-6 hours, until they pass the bend test. No foil until they come off the pit...

I only cook loin backs and they average around 5 hours depending on how full the pit is

PS: Did Bill mention the abundant snakes out there this year. The drought over there has really got them running around. Better check your bunk before getting. I'd hate for one to curl up with you in the middle of the night.
RIBS;
If i cook more than a few racks ...i wrap 3 at a time..(middle rack!)
I go more by looks & feel than time now & often I don't wrap at all.
:but my rule of thumb is; @ 225....3 -1 - 1-1.5 works best for me
(& the longest i cooked a brisket?? ......i go 18+ all the time)
