I need help from some of you profesional catering types.
I got volunteered to cook for a benefit fundraiser:shock: . I was just informed they sold 500 tickets. Each ticket is for one BBQ plate. They want to serve brisket, sausage, beans and potato sald. What I would like to know is how much of each item do we need to feed 500.:shock:
How many pounds of brisket un cooked
how many pounds of sausage un cooked
how many pounds of beans all ready cooked. I was thinking the big cans of beans from Sams
How many pounds of potato salad

I would think 4-5 oz of each meat and about the same of the sides.

Well the number of folks has been reduced to 350.
Can anyone answer my querry? I am at a loss here.

I would plan on about 1/2 pound of cooked meat per (adult) person. An average 12 pound brisket will feed about 10 people when served with sides. There are 10 links in a 42oz. pack of Slovacek Sausage. I would plan on 2 people to 1 link. You should be able to get about 16-5oz servings from a tub of potato salad using an ice cream scoop. I would use caned pinto beans and doctor them up. The Bushes sweet beans burn at the bottom of the pot. Remember kids don't eat as much as adults and prefer hot dogs and burgers over a BBQ plate. I would not let people serve themselves, there is a lot of waste when they do. I don't cater so this is just a guess based on past experience. I'm sure some of the pro's can jump in and help and correct me if i'm wrong. Good luck.

I'm new to this forum and while reading caught your post. If you want a great spreadsheet file I use for my catering business, send me an e-mail and I'll forward it to you. It's a great tool to have. It will break everything down for you.

Here is what I would probably cook for 350 people:
20 briskets (10 - 12 pounders)
80 lbs sausage
90 lbs potato salad
35 lbs pinto beans
