I'm cooking my first briskets today, is it normal for the milky ooze to be cooking out of them, or is this a bad sign? only been on for about an hour.

Yeppers dittos to whut them other two said...door fanning will make it tough. Lets the heat and moisture and other good stuff escape into the atmosphere. Will get Algore all riled up about global warming etc.

It tasted good, but it did not look right to me, it is a redish pink all the way through. I rubbed them with mustard like I do my butts, but lightly, just did not taste like I was expecting. I let the one you see rest in the cooler for a couple of hours, the other is still resting with the butts, will get them out in the morning. Here is some pics, what about the color? I wrapped at 160, carried them to 200-205. They cooked about 8 hrs.

Well only time I ever seen a brisket that red at them terminal temps it had been cured as with Mortons Tender Quck..Prauge Powder..Insta cure..Modern Cure etc. Whut kind rub you got egg xactly? Enquiring minds need to know this kinda stuff. Thanks.

Yep it shouldn't be red unless it was cured. Need to check it out looks like you have smoked corned beef there.

Well, I went and looked Papa, and you are right, they were corned beef brisket. So I guess I didn't get the deal I thought I was, at least what I wanted.
