I just found 1LB 3oz of the original Texasbbqrub. It has to be 2 years old. It was sitting in a back cabinet in a sealed but not air tight tupperware container. What should I do with it? Use it or chuck it?

Rub it on an old brisket.

If it's still sealed, I say just go ahead and use it.

If it shows like it has too much moisture in it, lay it out on a cookie sheet and dry it in your oven over a low temp (275*) for about 10 minutes or so. I would do it even if you think the moisture is low... this will regenerate the seasons a bit.

Its not sealed. It was in a plastic container with a lid on it.

I found three shakers in the trailer this weekend where I had put a piece of foil on top and then screwed on the lid. I had to take a kitchen knife to bust the rub loose, and then I tossed the chunks in the blender. I hit pulse a few times to break it up and then rubbed down four slabs of spares.

Saved opening a new bag of rub, and no one knew the difference.

with any spices, at worst they get a lil stale or they are not quite like how they are fresh. Like said before putting it on a sheet to dry it out would be your best bet if your unsure.

I would personally try it out and report back your findings.

If it smells good, use it.

Even if it has not formed into chunks, put it in the blender, a quarter pound at a time, and pulse for 5-10 ten seconds. That will bring it back to almost "new."

I keep the bags in the freezer and just re-seal any open bags with a twist tie. We always have a big holed shaker full on the counter next to the pepper mill that is used for eggs, soup, sandwiches steaks, damn near everything edible...etc. When the rub in the can lumps up we just shake it a little harder. Try keeping your un-used in a freezer, it seems to keep it close to fresh for us.

If it is dry, you can try putting it in the microwave. It seems to add some moisture back in to it.

The rub is not dry and is really no clumpier than it usually is. I know it wont make anyone sick I just wasn't sure how fresh it is and if it would enhance the flavor of the food I put it on. I guess I'll just use it on something I serve to family, not to friends. I don't mind losing family members but I do like my friends.

my 2 cents sez use it. Not too many spices in this world go bad.
