Do you rub and put it right on the smoker or do u rub and put it back in the fridge for 8, 12 or 24 hours?

When smoking butts, briskets, or other large pieces of meat, you can do it either way. I don't think it makes a difference. I usually just rub them and put them on the pit.

I usually rub them the night or 12 Hr before. I can't say it makes a huge difference but I think it's better.

I do it the night before. So when I put it on the pit it is cold as possible (to get a deep as possible smoke ring). Plus I like to sleep as long as possible, its just one less thing ya have to do in the morning. Do it night before and enjoy the sunrise and the smell of burning hickory in the morning. :)

You don't need to leave the rub on it for any time before putting it on the smoker. Lots of people choose to, but I don't.

I just unwrap rub and once I get them all rubbed I load them into the smoker. some rubs are designed to put on 12 hours before and then touch up before smoking but I don't think TXBBQRub is it seems to work just fine to rub and cook. I like it for it helps keep it simple. :)

I like to rub mine the day before. Just one less thing to do the day of cooking. If I inject I do that the day before also. Let the meat soak it up.

The night before. Get all the prep work out of the way, rub the meat and wrap it up and put it in the fridge.

I bring the meat out of the fridge two to three hours before going in the pit.
I rub, and let the meat absorb the rub as it comes up to room temp.

I do it just like Daddy. Drag it out..give it a mustard slather and a rub and let it warm up a bit. Hour or two at room temp works for me. Used a splash of Wooster for years but have about decided the mustard works mo betta.

Mustard and rub the day before so's I can spend time bringing my pit SLOWLY up to temp with a SMALL fire, not having to attend to preparing the meat the day of the cook.

I prepare ribs the day before for the same reason.

Just before going on the pit. I think there's no additional value to let it marinade cold or warm. It's spicing and not marinading, so there's not much meat reaction to the rub staying on for a longer time. This sounds reasonable to me.

I do all the prep the day before. It may be all in my head, but I think I get a better end product this way.

Boudreau's is still a good butt rub if your chafed in that area. :lol:

I've been thinking about mixing the worstisher (sp?)/TBBQ rub
in a dish before, and rubbing it on the meat as a paste..
I've seen a few do it.. Is it better? worse? looks like it might save some
rub from being wasted... opinions?

i rub the meat while the pit is heating up with worster, then mix some worster and bills rub in a bowl to make a runny paste. it works better for me that way. as soon as i get the mixture on, i put it in the pit.

Be careful with the salty rubs if you do it the day before. You could end up with ham. I will rub the day before with a salt free rub then salt it right before it goes on the pit. Just something to think about. I made ham ribs one time by accident so my lesson was learned at that time. :wink:

That's the way I do it. I think it saves a little time, and a little less waste.
