View Full Version : Tough chewy chicken skin

I fired up my new pit for the first time last weekend to smoke chicken halves.
Before cooking. I marinaded the chicken for a few minutes in Italian dressing, then rubbed in Texas BBQRub. I cooked the yardwalkers for about 2-3 hours at 200 degrees. The chicken turned out moist and tender, but the outer skin was tough and chewy.

Trying to figure why the skin was chewy. I did throw the chicken in the
smoker before the heat got up to cooking temp. Wondered if that might be
the problem.

200* is way too low, kick the temp up to at least 250* Put the bird bone side down on the grill just away from the coals. When the internal temp reaghes 170* you are good to go. You might want to put them over the coals for the first 15 minutes or so, then move them off to the side. Do a search because there are several threads that address your question. Good luck. Where I cook birds on my offset it is about 275 and the skin comes out rubbery at that temp. At 200 you're just warming it to death. Chicken usually works out better hot and fast.

Can always take out your trusty propane blow torch/weed burner/firebox log lighter/chicken skin crisper and get a couple or three passes over the skin just before serving...that'll put a nice golden brown hide on 'em...:wink:

Grate minds be think'n alike. Did that very same teckneek last Friday.:P
But gotta be careful tho as ta how close ya make them passes over 'em.......too close an that skin'll roll up off tha meat kwicker'n Woody on a sheep.:twisted:

Dice that skin up into tiny pieces (scissors work real well) and freeze it, then when you get ready to do some crock pot beans, toss it in there...

Turkey skin works real well too. :)
