smoked lamb chops (pics)

Had a small rack of lamb vacu-sealed in the freezer for a few months now and thought it was time to cook them. So I decided to smoke them and see what happened. I started off by making a wet rub of: olive oil, fresh garlic, crushed red pepper and thyme. I put them on cold and smoked them for about an hour and 15 minutes at 235-250 degrees. The last 15 minutes I stoked the fire to almost 300...I didn't really get the char I was looking for but I can't stand most chops or steaks past med-rare so I pulled them...

As you can tell my 3 1/2 year old LOVED em'. :D

They do look good, although I've never tasted lamb (some goat a few times) in my life.

Is your comment about Woody being concerned about it being one of his recent girlfriends?

Did I ever tell you about the party Kathy and I were at with Robert Osborne? We all ate lamb chops and threw the bones in the homeowner's potted plants.
