Over the years I have always cooked ribs by wrapping them in foil, cooking for 2 to 21/2 hours, unwrap(pour grease off), and glaze, cook for another hour. Always fell off the bone and had rave reviews.
After trolling here for quite a while I decided to smoke a rack of spares using the 321 method.
I trimmed the end off of the ribs to do them St. Louis style. Just because I had never done any that way. Dowsed them with wooster and rubbed them with Tx BBQ rub.
Put in my upright smoker at 225 for 3 hours, wrapped for 2 , the glazed with a mix of BBQ sauce, sweet and sour sauce, dried onions, garlic and ceyanne. Made it too hot from the cayenne and cut it back a little with red plum jelly.
I will never go back to the cooking in foil first method. I am hooked.

The ribs came out very nice. Keep up the great work.
I dont foil my ribs when I cook them. I just rotate them after 3 hours into the cook. After when the ribs are done I foiled them and put them away. Im not a fan of meat fall of the bone. I like a little resistant to the meat coming off the bone.

I could sit down to a plate full of them ribs, a big scoop of tater salad, and some sweet beans. Looks great. You did everything right, now put ya a real beer in that coozie, Budweiser and the stage is set. Congrats.... :thumbs: :drool:

the beer can be anything...I don't drink much beer over the last 15 years.

I'm glad you brrought up Mike's...I went looking for their Apple but couldn't find it. So I asked and the store manager researched it and he said the company stopped making it...bummer. That was my favorite flavor.

Thanks for the great comments guys. I will attach a pic of my Smokey Mountain smoker, and notice the top getting a little pitted and rusty. I am almost looking forward to it rusting out and that would give an excuse to give Ritch a call and order me up one of those backyard models. I sure have my eye on that 20"x40". Oh yea I cooked up some pintos when I did the ribs, but I could not post them, I will try here.
As for the beer goes, I think that could start a whole new thread. What you guys think about Budweiser selling out? :cry:

That was the miss's favorite flavor.. bummer.
I've grown quite fond of the lime verision..
Then again. I never cared for BUD at all (that kinda goes for beer in general, but that's another story) but their new version with lime in it is'nt too bad.
