Rub with AJ and Wild....225-235 degrees for 3 hours and 45 minutes. Absolutely perfect. Good smoke flavor and really moist.

Wanna say thanks to Ritch for the help with my tuning plates. I am amazed how moving those things a half an inch can move those thermometers up and down.

Now that's chicken!,,i cook my chickens for about 4-4.5 hours with maple and cherry,also after they almost done i place them up on the top rack just like these in the photo to crisp up slightly from the metal above,i get laughed at by some who think chickens is meant to be cooked in 1/2 hour.:wink:

Awsome looking chicken BigT..That is going to be my next smoke adventure. I have cooked drunk chickens on a grill with indirect heat at around 300 for around 1 3/4 to 2 hours, and I think the temp you used would be perfect for a smoker. Plus can not beat that purdy smoke ring and that great smoke flavor. Nice color on the finished product. You know Conroe is that not far of a drive for chicken that looks thta good. Pardon me for being a neophite but you say you rubbed with(AJ)...what is that?

I think i could have left them on for 30-45 minutes longer. But I always think I could have done a better job...even when the family says it's perfect. :D

haha...David, that's funny. I have to admit I Google'd the guy to see who he was. And you're showing your age a bit...

I have this weird obsession with making sure my "Q" looks purty (That's Texan for sexy) :D before I serve it. Seems such a waste to give it that many beers over so many hours just to yank it apart and throw it into a pan. :lol:
