Got it last night marked down, still $1.49# from $2.69, it will easily fold like I've read you want, just a hair over 10#. Now if it doesn't rain tommorrow, and I can get the wood to burn from todays rain, I will cook it. Wish me luck!

Wishing you luck Tommy. Congrats on the first brisket. Just follow the advise from the pros here and you will do just fine. What part of the country are you in? Take pic's if you can and don't forget to let us know how it turns out.

Got the brisket, a butt, a corned beef brisket, and later going to put on some deer backstrap. Rubbed them with mustard and Butt Rub, starting off with cherry and apple, hope mixing woods don't mess the flavor, will finish off with oak and pecan. Will get pics of progress later.

I think the cook went well. I have to build a tighter smoker, adding wood every hour gets tuff on an allday cook. The brisket cooked in about 8 hours, quicker than expected. I kept the cooker temp around 225, little fluctuation here and there. I was pleased with how the brisket tasted. After it was all on the smoker, I found some Texas Wild I had forgot about, oh well, it turning out good, I'll def cook another. The chicken leg quarters were last minute, on clearance, ate them right off the grill, were so good, went back after the brisket came off and cooked a bunch more legs and thighs(on clearance also), plenty of food to eat this week:D
