My first brisket. I think the cook went well. I have to build a tighter smoker, adding wood every hour gets tuff on an allday cook. The brisket cooked in about 8 hours, quicker than expected. I kept the cooker temp around 225, little fluctuation here and there. I was pleased with how the brisket tasted. After it was all on the smoker, I found some Texas Wild I had forgot about, oh well, it turning out good, I'll def cook another. The chicken leg quarters were last minute, on clearance, ate them right off the grill, were so good, went back after the brisket came off and cooked a bunch more legs and thighs(on clearance also), plenty of food to eat this week:D
