I was cooking some loin backs yesterday. Just before I started them, I went to the store for some cabbage and saw beef ribs that had a lot of meat on them. So I bought all the good looking ones. Got back home, removed the membrane and put a heavy dose of Lea & Perrins, and a heavy covering of Texas Brisket Rub on them. I cooked them with the loin backs @ 246° for 4 hours. The beef ribs were the best tasting I ever had. Meaty, juicy, and the rub complimented the meat perfectly. There was no time for pictures. Me, my wife, and one of my friends ravaged them. I wish I could find beef ribs with meat on them all the time. By the way, I used the regular Texas Rub on them and they came out good, too.

Glad to hear someone has better luck with beef ribs than me. I've tried a couple times and you could patch an innertube with em. Maybe freddie should start a thread on beef ribs an let us in the secrets. What say ya FF?...or anyone out there? :)

The timing of this thread is priceless for me. I am going to be doing some Beef Ribs on Friday, and was looking for a good prep method.

I'll try to get some pics.

When good beef ribs can be found (bones with actual meat on them) and cooked right, they can be good eats!

Keep an eye on the meat case when the stores have sales on ribeye steaks or roasts. If the store trims them in house, you can usually find some decent ones. Unfortunately, this only happens a few times a year.

I like to use beef ribs to make chili. Cook them until the meat falls off the bone and put it in your chili.

Good question. All I see in the retail stores is whut my granny would call soup bones. I figger maybe the wholesale distributors like Sysco (restaurant division of course) could land some much mo betta than whut we get. Just guessing. Now down at Corpus you just drive by a big Meat Packing Plant called Sam Kane's and buy some killers. Could in the early 70's anyway..and they still in bizness as far as I know. Good rib can be cooked like the good steak it come from..which is grilled hot and fast. Now actually I like to slow em down a little if possible..but they do fine direct over Kingsford and Gulflite. Season with salt..black peppa and MSG. Yum yum.

Must be the color in my monitor starting to go, how'd you and KABBQ cook those ribs? The one you're whacking on looks par-boiled.

I did my best to run the pit low and slow, but Ol' Kickass likes to do Hot and Fast, so I only got the pit to the temp I wanted for the ribs for about 2 hours. The rest of the time, the temps were a bit too high.

Yesterday I did some "Beef Back Ribs". They did have some pretty good meat on them. Worchester sauce and TBBQ rub (regular). At about 200 degrees, cooked for almost an hour and a half, then foiled them for about 45 minutes. Meat puckered really fast on the bone. Very moist, tender, and tasted excellent. Sorry, no pics.

I have a hard time finding meaty beef ribs up here. I think the butcher I go to smokes all the good meaty ones themselves to sell at a higher price. I'll keep lookin' cause when you can find good ones they're as good or better than pork ribs in my opinion.

Restaurant Depot bro. The short ribs are the best.
