OK all you caterers.....chime in! I am having a bbq get together at my house next Saturday. I am expecting around 20 adults (10 couples)(no kids). Everyone is bringing a covered dish. I am trying to determine how much meat to cook. I just want everyone to get a little of everything. I am thinking 1 brisket, 1 large butt roast, 5 racks of ribs, 10lb leg quarters and some links. :shrug::shrug: Does that sound like enough, too much, or not enough??:willynilly:

I think that you're overcooking, but I would probably do as much or more than what you're doing. You NEVER want to appear cheap or to run out of food. It's WAY better to have too much than not enough.

Sending them home with leftovers always leaves an impression, but not enough food will leave a DEEPER impression...more like a dent.

Also...instead of the quarters, I'd do both drumsticks and thighs. Easier to choose between and easier to eat.

I personally overcook just to have some leftovers and also you my as well do the leg 1/4 cause are about 6-7 bucks a 10 lb bag so you cant wrong with that and depending on what/where you buy your links those anit too bad niether. It also gives them some other choices. I would just stick with what you got.

I just cooked for 40 a few weeks ago.
2 briskets
8 ribs
10 lbs chicken thighs (only)
3 packs of Slovacek sausages
Sides of taters and beans and bread

They ate ALL the chicken thighs, damnit.
Had about 2/3 brisket left
Had 1.5 racks of ribs left
A crap pot full of sausage left (won't cook much of that again, although I'm enjoying it)

Now, I had some chow hounds there. You may have folks that don't eat as much. Leftovers are always good for me :D

If it were me I would knock out the pork butt..and cook the brisket (packer), 3-4 racks of ribs and chicken and links..:thumbs:

You got that skippy right:D Yea the slovacek sells at sams over in my neck of the woods had some last weekend and it was pretty good. The headquarters is Snook TX I believe.

Well, I've never done a fatty or ABT's so don't want to take a chance like that. I may be going to Sam's this weekend. I will look for the Slokac....slokav....slocekva......the sausage.....:lol::lol:

You won't find them there, You will have to order on line or drive there to get it. The best Sausage in Texas if not Texas than the world. My opinion though.:shrug:

I'd do a large packer.....4 racks of spares.....drumsticks (pk of 18-21 legs at Sams...Approx. $7) skip tha butt an links. Of thoze 10 wimmen...5-6 will problee eat like a bird tryin' ta watch their figure :vomit:.....but their mate will problee pick up their slack. :thumbs:

I cooked for 25 oil field hands the other day. Cooked 2 briskets and 3 slabs ribs, beans, Bill's taters, peach/cherry cobbler, and trimmings. Had a few ribs and at least 1/2 brisket left. I think you will be feeding the folks for several days on what you have planned to cook.

For the sausage phase of the operation I been snaggin some jap and cheese flavored sausage from Kroger called Texas Traditions make by Blue Ribbon (from Jouston I think). Killer flavor...heat level noticeable but not overpowering...casings a bit chewy but not insurmountable. I like to wrap em in cheap bacon and slow grill. Also try JC Potter Hotlinks from Wally World. They have a nice soft bite and good heat. I drove all the way to Sam's to buy Sloveczeks and was highly unimpressed. I got grandkids who make mo betta sausge than that bunch o bohunks.

Sounds like the sausage tastes are like a bbq cookoff. It may be the best in the world but if the judges don't like it, it doesn't matter. It's all taste preference.

Well, whatever your plan is...look generous and not cheap, that's the essence of what I'm saying. You don't want them to regret coming there to 'eat' if it isn't worthwhile.

And I would have to ask what flavor did you purchase ... See most Sams never carried the Jalapeno or never carried the Jalapeno with cheese ... Somewhere around last Sept or Oct they stopped carrying everything except the Pork and/or Beef depending on what each Sam's wants to stock ...

So it really depends on which Slovaceks you purchased ... If it wasn't Jalapeno or Jalapeno w/Cheese then you are correct ... nobody else has been impressed with the Pork or Beef either ....

It's like Oma's great sausage if you can get through the casing ... why would you try if you can get something better in all catagories ....

Well the Sam's up here musta started carrying it early cuz I was munching on Jap n Cheese flavored Sloveceks 2 or 3 years ago at least. Come highly recommended by a lady I work with. If it was a contest and been having good fortunes with whutever brand or style...don't think I would bother to change either. I just buy it or sometimes make it to eat. Which I been a lazy boy the past coupla years and aint bothered to make any because it a pain in the booty and my co-sausage meister is still trying to get over his bad old MC wreck..but essentially it just like bbq in that if you want the best good plan is to make it yourself. The mass produced stuff can't hold a candle to the product of a dedicated..motivated and knowledgeable amateur. The worst I ever made is about a hundred times mo betta than whut you can buy at the sto. With one exception..woops make that two. Portugese Linguica kicked my coola cuz I got it too lean and added too much vinegar..and my Boudan was edible but not as good as you can buy. Can't find no pork liver up here and used calf liver..that whut made it sub standard I think.

Drop the "only bird going to heaven" and you will be just fine. Heck, you live close enought to Louisiana that they will most likely eat all that ya know.

Slovaceks beef only thing over here at Sam's lately. Jalapeno is now Tony's, I guess it's a price thing. Tony's not bad and the weekend crowd could not tell the difference.
Slovacek Jalapeno or Jalapeno with Cheese (special pick-up only) is really bout the best to be store bought. Opha's is right there with them but has a tad more heat and much more cheddar, with a courser grind and not so meally.
Pit fall is the tougher casing, course it ain't that bad if grilled ya know.
Keep both in my personal cook stash and only a good friend or two gets in on them, never no in-laws :D

Well I agree with everybody else on that being plenty of food and then some..but everybody likes to take home a little if you got extras and are feeling generous. As the cook of this operation I would advise you got too many meat choices here. Remember you gonna have to do the cooking on all that dissimilar stuff. I would vote for keeping it mo simple such as brisket and sausage and forget the other non sense. That give you some time to soak up some suds..enjoy your guests etc. Normally a 10 lb packer brisket will feed ten folks..so I cook two big ones and about 5 lbs of whutever sausage you decide on. Just trying to cover all the bases here. Butts is also a good choice. Again an untrimmed bone in butt figger out to about a pound per person raw weight and that be if they heavy hitters.

Beaumont Sam's carries them. Zummos are good...until you try Slovaceks.
