2 flats on the WSM

I am cooking briskets for the bar staff where we are gigging tonight and also, for my bandmates . I am using the WSM, GFS Lump, some oak and hickory chunks, Texas BBQ Rub-regular, and a Padron 64 Anniversario Diplomatico. I already have the foil pulled. The one thing I learned at the rodeo, was, I am not using enough foil. It must be true cause those "rodeo briskets" were mighty tender by Saturday!:roflmaoha0::thumbs:

I started them at about 5:00 am. Just switched them on the racks and added more lump. They are at about 145 internal at 6 hours. They were both 8 lb flats. The WSM is a GREAT product for the $$. I have cooked more BBQ this winter than any since I bought the big pit!

Well, all the folks at that bar, who ate my brisket were ecstatic!!! Funny how many marriage proposals I get when I bring a full pan of brisket to something!!! Too bad many of them are from MEN!!!!
