Normally, stuffed with cream cheese, or a mixture thereof with other cheese, wrapped in bacon, and smoked.

How long do you have to smoke these? I am cooking this Saturday and may want to throw some on for an appetizer.

I have only done them three or four times and I have never wrapped them in bacon. The longer that they are on, the less heat the pepper will have. I did them on a Weber 22.5 kettle, indirect heat (or as much as you can be in a small grill) for around an hour. Mine were stuffed with precooked hot italian sausage, creamcheese, and some garlic.

Last batch, around 10 or 12, I did a few weeks back, cooked about 1 1/2 maybe a little longer, smoker runnin about 230 or 240. I found some big japs, so I suffed with cream cheese mixed in a little bit of chopped chives then poked a "Little Smokey" sausage down inside then packed the top with cream cheese. I used the cheap bacon and crossed 2 short pieces across the top or cap of the jap and pinned it with a tooth pick. I cook mine till the bacon is done to my liking. Once again I use the cheap bacon. IF I can find the big japs I cut the cap off then use a paring knife to get the ribs and seeds out from the inside. Is a little labor intesive, but well worth the effort.
I have also fried pan sausage and mixed in with the cream cheese. I always give the ABT a good dose of TX BBQ rub before they are put on the pit.

I agree with Will.About 1 1/2 hrs.230-250.Cheap beacon (thin).
Will ,they make a Jap. corer and it works great! I think it came from Wally World.Looks kinda like a potato peeler.Cut off top,ring it a couple times,veins
and seeds come out.

Well, I agree with Will and Don...Nice idea with the smokies Will (stealing idea)..:D. Myself, I like the thick peppered bacon.smoked till the bacon is just the way I like it, Sharp cheddar, cream cheese, scallops fried in butter, and now maybe lil smokies:) :drool:
ps..oh yeah, I use a baby spoon to clean em, works pretty slick

Nobody warned ya though but whatever ya do wid da japs make dang sure ya wear some food handlin gloves when ya prep 'em! I speak from experience here so trust me on dis one! :roflmaoha0:

I actually came home from the store with little smokies but my wife MADE ME:angry6::couplefight: go back and get Jimmy Dean sausage instead to mix with the cream cheese:surrender::bowing:

great idea with the sausage mic is right use the gloves :thumbs:
