Cooking a wedding this Saturday and I'm just trying to confirm my amounts. Some is "as requested" by the client...100 people (men, women and children). She wants enough pulled pork for everybody, 60 burgers, 40 dogs, smoke sausage and 2 sides.
Figured on 8 butts (thought 7 would be enough but they come 2 to a pack), the 60 burgers, the 40 dogs and 20 lbs of sausage. Two full size pans of baked beans (4 gal. w/ a little ground meat, bacon and a few other things added in) and 2 full size pans of a corn recipe that they've asked for (4 gal cans w/ some extra stuff added in).
I'm in the process of purchasing everything and I just want to check my numbers w/ y'all.
Oh yeah, she settled the "smoked vs. grilled" burgers...she said it was her gig and that she wanted them smoked. She said that she would even make a little sign advising that the burgers were smoked and therefore may be red in appearance but are fully cooked :) Said that they could trust her, or not, but she likes 'em smoked and that's how she wants them.
