Can anyone tell me how chickens turn out on a WSM? Thought about getting one for cooking chickens. I have seen threads from people smoking briskets on them but I can't find anything on chickens. Thanks.

They work wonderful for chickens as do the models wihout a high price tag and fancy paint job as per a good old 30 buck ECB from wally world. With an ECB person just need to drill some holes in the firepan so you can get the heat up. They used to have a hole but some dumb yup burned down his deck or something similar. Thats the rumor anyway. Now they are solid and need to be made holey.

Thanks. We are thinking about moving our chickens off our main pit and onto a smoker or grill. I tried an old smokey and they look great and flavor was good but they seemed a little dry to me with the more direct heat. So I was looking into smokers.
Try this recipe for chicken. Bluesmoke posted this awhile back. Worked well for me.

I bought a WSM to cook chicken in comps. Best money I ever spent q'in. I now get more walks with chicken than anything else. Same recipe as when it was cooked on the big pit, just a lot more consistent now.

Before you take the plunge, I'd check out black barrel, no water pan, smokers. I've had them both, and there is a definate taste difference, for about the same amount of money. Also, recomend using all lump as a fuel supply, especially with chicken. JMO. :popcorn:
