Anyone ever removed a gland from the inside of a pork butt? My butcher told me about it and said it is bitter tasting. Next time I make some pulled pork I'll have to do a little digging to see if I can find it.

Never heard of it or seen one. Then again if there is one it probably got eaten in the feeing frenzy. :D

You will find them once in a while. If butcher cut close up on/under shoulder, that's where they be from what I found. Not no big problem anyway.
They located in pretty much the same places as in a coon ya know.

The way it was explained to me was if the bone is on your right hand side the gland is located in the separation of meat or lip was the word he used. You would cut into the deepest part of the flap or lip and it's about the size of a dime and surrounded by fat. I'll see if I can't find a link that describes it better. This link says it's about an inch across. I thought it was quite a bit smaller.

I've cooked my share of pork butts maybe around 20 or so and haven't noticed any bitter tasting meat/gland. Who knows?

Darn son, I'm fixi'n to throw 14 butts on the ZZ-Gator in the morning. Should I cut back a few? I feel guilty ya know.

I've heard tell of this gland. I think Buckeye ran a post about it nigh on two years ago! If I had one there, I just served it up with all the rest. I keep an eye out for it though......

When I cut up pork butts to make sausage, I usually find it in just about every one. It's a small round gray gland about the size of your thumb nail, or a small marble. I'm sure I have missed finding them many times, but never could tell. :shrug:

I remember Buckeye talking about it also. Seems he said something about it tasting like sh**, or something like that.....
I've cooked quite a few pork butts and in just a very few of them found it after cooking. Never had any nasty tasting spots though. Not like what Buckeye found!

Thanx fer postin' tha RuiNT.....I wuz gunna jump in an add my :twocents:. I alwaze look for that "mystery gland".....I don't noe if I've found it yet, but I do find sum vanes an white tube-like thingys (bout tha size of pencil, maybe a lil smaller) an bout 3/4"-1" long. I jus core 'em out like ya wood tha stalk part of a cabbage. Haven't had that problem since that incident 4 yeers ago.:thumbs:

Sombody needs to post a picture showing exactly where it's at on a whole butt. I have never seen or tasted one, but I can say for sure that I don't want to. :D

yeah, I saw that, but the butt is sliced up. I want to see how to surgically remove the gland from a whole butt.

That may be why I haven't seen that little nasty thing often. That photo shows the piece with the round bone and the ones I usually buy have the blade lookin bone in them.
