I jus happened ta notice while in tha meat seckshun of my local grocer.......there were bout 4 briskets sit'n out. Next ta them were sum t-bones, ribeyes, sum chuck roasts etc. Whut jumped out at me wuz tha contrast of colors batween tha briskets an tha other cuts of meat. Tha chuck roasts an tha ribeyes an t-bones were of corse reddish in color az opposed ta tha color of tha brisket which wuz tha normal brownish red. And no, tha brisket wuz not old...it looked like an average brisket. Why tha difference in color of theeze 2 red meats?

I believe they use more red dye in roasts,steaks,etc.:shrug:

Cause on cut of meat gets more sun then the other cut of meat. :shortbus:

Seriously, I think it has to do with where the cut of the meat comes from on an animal as to how it works or what its functioning purpose is. I'm kinda guessing here so, I would have to say that depending on its purpose or function it would require more blood in that general area. So I figure that the more that one particular meat or muscle works the darker the meat would be. But I'm just guessing. :shrug: :stirthepot:

It basically comes from how you see it packaged. If you pull a brisket from the cryovac and slice it raw, it'll be red, too. Using any type of dye or something like potato white to keep the meat looking red is illegal, but some stores try to do it.

The USDA pulls spot inspections for this, and their compliance officers drive vehicles with a no-hit state tags (If the tags are called in by police, they're notified to let it go unless the driver has done something really egregious.) My brother's has Texas tags registered to F.T. Worth. That way when they pull into the lot, the spotters don't see government tags and start pulling meat from the display so it can't be tested. Course that would only happen at stores that are trying to break the law in the first place.

When it comes to steaks, I look for the manager's specials where the meat is starting to turn purple. It'll normally have more flavor and be more tender. At the commissary here at Sheppard, when meat reaches it's sell by date, they flash freeze it and sell for 25% off. I check that case regularly and keep the freezer stocked.

They cannot use any dye, but they can and do use something similar to carbon monoxide to fix the red color on the surface of the meat before it is packaged. I am only speculating, but I'd bet they don't bother treating cheaper cuts like brisket. They may not get enough bang for their buck.

When you see some of the meat at the markets with dark brown spots inthe cooler, guess they are bad huh? I always seem them at Krogers like that in the reduced section. Never bought one.

Never bought one.My wife goes to Krogers and mops up on the deeply discounted steaks and other cuts of meats that have been sitting idle too long. She brings them home puts seasonings on them and vac seals them and throws them in the freezer.They taste just fine bud, never had a guest at our house complain. :D

Thanks Northsider. I'm no expert on meat, just didn't know if they were starting to go bad. I gave up on Wal_mart. Bought too much bad meat from them. Don't touch their stuff. Kroger is by far the best around here

Kroger is by far the best around hereI agree Kroger has a way better meat selection hands down but it's a bit too pricey when its not on sale or discounted. Here in Houston we have plenty of super markets to choose from, so finding good deals isn't a problem and the cheaper stores have a real decent selection on meats but they still don't compare to Krogers. :)

Well...tha Krogers round heer are iffy. There are 2 Krogers that I shop at.....but one I will never buy meat from....becuz I noe how they handle their meat. Case in point.....Within 5 minutes, while I wuz waitin' on tha fish man ta come back to tha fish counter I noticed a stockperson come buy with a buggy full of misplaced items along with bout 5 or so packs of meat items. He reterns 'em to their respecktive places. Bout 3-4 minutes later a lady comes by with a basket with bout 2 or 3 pks of chicken wings, an a pack of chicken thighs an puts 'em back in their respective places........this lady happened ta be tha store manager.:shock: Kwestyun iz....how long had thoze items been sittin' in tha potato chip or toothpaste seckshun, before bein' reterned to tha meat seckshun? :rolleyes: I've seen meat layin round different parts of tha store many times an think to myself how trifle'n that person iz who left it there.......but never imagined nor witnessed thoze items bein put back amongst tha refrigerated stuff again. Problee happens way more often than we think. I don't doubt that whenever I do git a bad pack of meat it's cuz I got hold of a pack that had been sittin' on tha canned goods aisle for half tha day then reterned to be reunited with the refrigerated items.:shrug:

So all you've done is make me think that all stoers mishandle thier meat or anything else that should be in the the cold isles. Who's to say that that trifile'n person that misplaced the meat amongst the patatoe chips in the first place didn't take a needle and inject the meat with a harmful substance.....the conspiracy continues..........muahahahaha. :stirthepot:

Remember a while ago there was a investigative report about some supermarket chains changing the smell and look of the long-standing meats by actually rinsing them with something like a bleach bath.

I know it happened in the past a few times, but this is one that I found pretty quickly...

Good point Buckeye but I'm sure Krogers isn't the only super market that stuff like that happens at. So all you've done is make me think that all stoers mishandle thier meat or anything else that should be in the the cold isles. Who's to say that that trifile'n person that misplaced the meat amongst the patatoe chips in the first place didn't take a needle and inject the meat with a harmful substance.....the conspiracy continues..........muahahahaha. :stirthepot:

I'm not leery of buyin meat from a store who hasn't given me reeson ta think their meat haz been mishandled......duzn't meen I don't think it's a possibilitee.:shrug: Whut I don't noe duzn't bother me,....it's whut I do noe that bothers me. Sorta like goin' swimmin'. Most pools git peed in....yet we swim in them anyway. I do the same thing at HEB and Super S and haven't gotten any complaints yet, though I do marinate them at least a day before cooking them, come to think of it, some of my friends have starting losing their hair, wonder if its the meat :shock:
