I went to Kroger today and bought a 7.5 pound pork shoulder to put on my cooker early Friday morning. This is the first one that I have done. I would like to inject it with apple juice before I put it on the pit. I have some worstershire sauce and some original Texas BBQ rub to coat it in. My question is, when should I inject it and coat it with rub, Friday morning, or Thursday morning before I leave on a family trip, and let it set till Friday. Thanks, :D

Myself, I do it while the pits heating up..right out of the fridge. Apple juice is a great inject...so is the Tony Cachatores garlic and butter inject. Did a turkey for easter with the aforementioned and it was fabulous....sorry about the long answer :)

I have injected with the chris lilly injection the night before and then rubbed right before it went on the pit with good results
I have also not injected and rubbed right before it went on the pit with good results
pork butt is very forgiving so try it one way and see how you like it, next time try a different way snd see what you think

I prefer to inject the night before, but if I forget I'll do it in the morning.
Never had any complaints

Sage advice, GS. My best shoulders have been Lilly injections prior to smoking. JMO, I like putting the salt inside the roast before the cook, which occurs when you Lilly it. I always seem to over salt when that shaker's in my hand. :idea:

I used this with great success for the 1st time out. Plenty moist. I also xfer it to the oven to finish off since I used up my fuel. :chef:
