View Full Version : How much to charge for smoking some ribs.

So I had my lil win from a BBQ comp at work a week or two ago. I have a couple that would like me to smoke up some ribs for them. I just don't know what to charge. I can get fresh spares for 3-5 bucks a rack and then of course the ingredients to make the rub and glaze and the charcoal. I want to be fair when charging folks ya know.

I'm no expert but it seems like $10 to $15 per rack above what you paid for them should be fair. I did some for an friend of mine and that's what I charged him but I did figured my time,wood, rubs, glazes and aluminum foil. No sense it not making at least little money to replace those items used. :shrug:
Your not gonna make a killing at it but your having fun and practicing so...

Yep the two racks I got were 4.87 and 4.77 for fresh spares. The only other ribs you can get here are cryovaced and cost more and I find these work just fine. I did get a cryovaced pork shoulder once and it was rotten probably didn't keep it at the proper temps when they shipped them here so I stick with the fresh. They like their pork here is Okinawa.

Two bucks a pound figgered on the price of the raw meat and they pay for the meat. Use the register receipt to figger out the labor charges. This be cooked at your house and brought to the scene of the crime. An extra hundred if they want you to lug your pit out there. That should work. They do the set up and serving blah blah blah.

Well my co worker gave me 30 I went and purchased what was needed for bout $25 this is only what I did not have already. Then he gave me another 20 later. They coooked thier own sides too. Thanks for all the advice If I can get some foodsaver bags I could just do a bunch of racks on the weekend and seal them up and then sell them that way.
