Evening All,

A friend of mine just got back from Texas, Canadian Texas that is. I gave her some money to bring me back some Texas BBQ sauces. Here is a list of what I got........

Red Creek All Purpose Marinade - Mesquite Flavored
Red Creek Jerky Marinade - Mesquite Flavored
A jar of Stubbs Hickory Bourbon BBQ Sauce
A jar of Cattle Exchange BBQ Rub
A Pint of homemade Cattle Exchange BBQ Sauce

Opinions are welcome
Can I freeze the sauce, my friend acted like I had to use it right away. It's not in a jar, it's in a tupperware like contanier. Thanks,

What the heck is "Canadien Texas?"

A panhandle town. It get's it's name from the Canadian River. Now the real question is why it's called the Canadian River since it runs through Oklahoma and the Tx Panhandle. Supposed to be a pretty neat little river.

Thanks for all the advice. I froze the sauce and I am thinking about how to use the marinades, I was wondering if any of you have ever used any of these products.

I use the red creek jerky marinade for my jerky. It is awsome. I add some red pepper flakes for a little more heat though. What I do is cut my meat up into strips. I'll fill a gallon zip lock bag about 3/4'ths of the way full of meat strips (never weighed it so I can't say exactly how mush meat it is), put a whole bottle of red creek jerky marinade and about 1 tablespoon of red pepper flakes in the bag. Seal it and put it in the fridge for about 24 hours. During that time I'll squish it around a couple of times so all the meat will get in the marinade. Then I'll put it on the dehydrator until it's dry. Better then any store bought jerky you can buy.

I also like to use the regular red creek to marinade chicken or beef for fajitas.

Thank you SmokinCoyote. I am thinking about what I want to do, but the fajitas sounds like a good idea.

God must have rearranged the landscape since I went through basic at Amarillo in December of '66. When I was there you could go AWOL, and someone could stand on a chair and still see you three days later. There wasn't anything between there and the North Pole but barbed wire.

I should have gone further back in the thread. I thought you were talking about Amarillo. I don't remember ever going through Canadian.

Do you use a cure before you do this? I am fixin to do some deer jerky and that sounds good.

No. I never have. I figure that here is enough salt in there to "cure" it. I can't tell you what the shelf life of the jerky is after it's done because it disappears within a couple of days. I have never had any problem with it though and nobody has ever gotten sick.

Thanks. My deer meat has been hard froze since December. I doubt it will last long around my place once finished.
