I'm planning on smoking a few butts on my day off and would like to save a whole one to take to work the following day. I cook the meat in foil for the last few hours so would I leave it in the foil till the next day or shred the meat after it gets done cooking. Is there a better way besides a microwave to heat it the next day? Oven? Suggestions?

Thanks!

hello flytime,,whenever i make pulled
pork, i take the leftovers on the following
day and put'em in a heat resistant plastic
bag with 'alittle' bbq sauce and set it in some
simmering water on the stove. try not to let
the top of the bag go in the water. don't wanna
take a chance of your pork sinking like the titanic.
it heats up real nice in the bag w/o cooking it like
a stove, micro, etc...i do the same with corned beef.
hope this helps.

I've done it both ways suggested and no complaints. I don't particularly like the micro...seems to...rubber..it up:shrug: Good luck :)

I have had very good results using a vacum sealer. 3lb package takes about six min to reheat in a microwave if they have NOT been frozen. Heat for three min. Take the bag out and knead it a bit. Cook for another three min and it will be ready.

Once frozen, vacum sealed bags of Q will keep for a long time. My prefered method is to reheat in simmering water for about thirty min.

I use a FoodSaver but any brand will do.

So when I get it off the smoker I should pull it then or wait until I reheat it the next day to pull it?

My process is to rest the butts for 2-4 hours. Pull all of the butts. Let them cool for another hour or so, tossing the pulled pork every 15 min or so to speed up cool down time. Refrigerate until the meat is cool enough to vac pac.

You can vac pac warm if you are in a bind like I was on the last cook but the vacum sealer will pull some juice out if you let it.

I like to flatten the bag as it vacums down.

When you finish cooking them let them cool like normal. Drain the juice out of the foil and serperate the fat from it. Keep this to the side. Pull the pork like you normally would. If you have a vacuum sealer then you can use that and put the meat in a bag. If using a vacuum sealer, take the juice from the meat and put it in a container in the freezer to "jell". Once jelled, add it back to the meat in the bag and vacuum seal it. Now you can reheat it in the microwave or in boiling water with all the natural juices still with the meat. It won't dry out this way.

If you don't have access to a vacuum sealer, pull the meat and put in a container and pour the juice back over it. Reheat it covered in the microwave just long enough to get it to temp, stir it up to mix the juices back over it and enjoy! You could also put it in a foil pan and pour the juices back over it and cover it with foil and reheat it in the oven.

If there is a good bit to heat,I reheat in a slow cooker with a half cup of apple juice.

I pull mine off the smoker late in the evening, and put in cooler wraped in a towel, overnight, they will still be hot inside the following morning....if you pull them late enough, your may still be warm for work the next day!

Leave them whole and then if necessary rehaet whole and pull as needed. I have even froze them whole After they are cooked they fit perfect 8lb.ers in a 1 gal ziplock freezer bag. Take it out two days before I need it and let it thaw in the fridge. Then cover and heat at 250 for an hour or so and pull as normal they come out like you just took it off the cooker.
