whole hog houston
Anyone have a source for hogs in the houston area? I've heard out brookshire way there are some farms. I was hoping to find something already done up and all I have to do is prep and smoke. Something fairly small.
of course, I don't know the rule of thumb on #uncooked weight hog to #of people served- though I heard there was one.

There is a butcher up in Spring that can fix you up ... but I fogot his name. Let me make a phone call tomorrow and see if I can hook you up.

The Holy Cow Cookers get one each year during the BBQ Cookoff. You might go to the web site http://www.holycowcookers.com/ and contact Randy Pauly. He can tell you where they come from. While there look at the Top 5 Food Network pics. I made and furnished all goat products for that.

The meat market in Spring is Fisher's. I should have the number around somewhere, will post if I find it. Don't know if you can just drop in and get one, I reserved mine.
I bought a 50# pig last year, whole, scraped, and ready to cook. Cost around $1.30 per pound as I recall. Along with sides, fed about 70 men, women, and children.
