Default Texas BBQ Rub - overnight?

Hi Folks -

Received my order of Texas BBQ Rub and Brisket Rub, and now that the weather here in Pennsylvania has warmed up a little, I am chompin' at the bit to put some ribs and brisket on the pit. I placed my order over the phone and had the opportunity to speak with Bill - great guy! Would love to meet him someday.

In the past I have always applied my rub a day in advance and let sit in the frig overnight. I printed Bill's instructions for ribs, brisket, and chicken, and apparently he does not do this. Would it cause a problem if I gave the meat an over-nighter?

You don't have to put it on overnight, but it won't hurt at all to do it.

Yo Ritch. Look here if you wanna meet Bill sometime as well as the rest of this Motley Crew, just be in Cistern, Tx. around the 1st weekend in November. I've found that any more than an hour on the meat is just too much time wasted. Seems to work it's magic in just under 15 minutes in my opinion.

Thanks to all for their tips and feedback. Woodman asks what I am cooking on. Several years ago I purchased a Brinkman pit, but now that I am retired I am looking for something a little larger, perhaps mobile. I have been reading with great interest the thread on Klose/Gator. So, Woodman, you're a resident of Willoughby. Had a friend that attended Case who lived in your town, so I have had the opportunity to visit. If you're ever up around this way.....
