Default Along with the veal brisket...cooked some chicken

I tried to imitate some "Jack Daniels Smoked Chicken" I had up at the distillery a few weeks ago.

Here's what I used:

- 1 c Jack Daniels (a generous amount)
- 1 c Apple Juice
- 1/2 -3/4 c mayonaise
- 1/2 c sugar
- 1/4 c salt
- 3 tsp ginger paste
- 2 tbsp worchestore sauce
- fresh cilantro

Mixed all this up & soaked roughly 16 pieces of chicken (thighs & drumsticks) in this for 3 hours. I took out the injector & also pokcd holes all throughout the chicken to get the JD deep down into the chicken.

Smoked (over Jack Daniels wood chips..what else?) for 2 hours at roughly 350 and it came out absolutely amazing.

I would periodically open the smoker & baste the chicken with the extra sauce I had which helped keep the chicken moist.

Good stuff here. You can definitely taste the JD down to the core of the chicken...it adds the most wonderful flavor you can imagine.
